2 tablespoons coconut flour

Ingredients for the filling:
1 pint cream (16 oz.)
3/4 cup powdered cocoa
1/2 cup Swerve or Lakanato (confectioners blend is best)

Instructions for the filling:
Prepare the pie crust (below) and let it cool to room temperature, about 1 hour. Make sure the cream is very cold. Mix all the ingredients in a bowl with a whisk and let them sit for 5 minutes but do not beat them yet. Get out the beaters and whip the mixture until strong stiff peaks are formed. Best Keto Key Lime Pie Recipe (dairy free option):
Preperation time: 15 minutes
Cooking time: 25 minutes
Serves: 8
1 can coconut milk or 1 pint heavy cream
zest of 2 limes
Juice of 1 lime
6 egg yolks
3/4 cup Swerve/Lakanto plus 1/4 tsp stevia powder extract (optional)
1/4 teaspoon sea salt
1 tablespoon Further Food gelatin order here
1/2 cup water
whipped cream, for serving, optional
limes, sliced, for garnish, optional
Instructions:
Make the crust and let it cool (recipe below, optional). Mix the cream, egg yolks, lime juice and zest, sweetener, salt in a bowl with a whisk. Heat up a bowl of water in a sauce pot over high heat and bring to a boil. Place stainless steel bowl over the sauce pan and stir continuously until the mixture starts to thicken, resembling a pudding and sticking to the whisk. Mix the water and the gelatin in a small bowl until dissolved, no clumps. Add the gelatin mixture to the bowl of cream and mix well. Remove the bowl from heat and pour into the cooled pie crust, use a spatula to clean the sides of the bowl to make sure it fills the pie crust. Place the pie in the refrigerator for 2 hours until set and chilled. Garnish with sliced lime and whipped cream, if desired.
Note: this recipe can be made as a pudding without the crust, if desired.

My sister makes this keto berry crisp recipe all the time for family occasions. It is a big hit with everyone, even people are not going Keto or low carb. Whip up some heavy cream for a luscious topping that makes it even better. This recipe used frozen berries so you don’t have to worry about berries being in season and it makes it more affordable. This keto berry crisp makes a lot of servings so it perfect for taking to a party to make everyone happy.
If you are following a keto or paleo diet you can eat this without feeling like you are cheating. If you are dairy free just top with some coconut milk topping. It is low in carb count and has a lot of fiber coming from the berries and nuts which lowers the net carbs. I don’t think anyone needs to eat sugar substitutes everyday but it is a good option for special occasions and holidays. I like to use brands: Swerve or Lakanto when baking for my family, or just stevia extract powder.
We are from the south and desserts like crips or cobbler are the king of desserts. Growing up we always had something like this but it was full of sugar or covered with gluten filled dough. This keto berry crisp is a great change of pace without breaking your belt loops. My grandma made similar versions but they usually included Bisquick so this kind of dessert holds fond memories for me. Keto Berry Cobbler
Preparation Time: 15 minutes
Cook Time: 45- 60 minutes
Serves: 12
Filling Ingredients:
48 oz bag of organic frozen mixed berries
10 oz bag of organic frozen raspberries
1/2 cup lakanto golden or swerve granulated
1 tablespoon potato starch (optional)
Juice from 1 lemon
1 tsp vanilla extract
Topping Ingredients:
1 1/2 sticks melted unsalted butter
1 1/2 cups shredded coconut
3 cups pecans, roughly chopped
1 tablespoon cinnamon
1/2 tsp salt
1/4 cup Lakanto golden or Swerve
Instructions:
Preheat over to 350 degrees. In a large bowl, fold together all of the filling ingredients until well combined. Pour the filling into large 4 quart baking dish, set aside. In another medium bowl, combine topping ingredients and mix until well combined. Sprinkle topping all over the top of the berry filling and spread out evenly over the berries. Bake in the oven for 45-60 minutes until juices are bubbling around edges. Cool before serving. Top with whipped cream, if desired.
Note: If you omit the potato starch, it will be slightly more runny after being cooled but still taste great!

Keto CBD Chocolate Chip Ice Cream
Ingredients:
4 egg yolks
2 cups heavy cream or canned coconut milk (order here)
1/2 cup Swerve or Lakanto (confectioners blend) (order here)

Instructions: Make sure the bowl of your ice cream maker is very frozen for at least 48 hours before making this recipe. Prepare a large pot, such as a dutch oven, with hot water, about halfway full and place it over medium heat. In a large glass or stainless steel bowl, add the eggs, cream, sweetener, vanilla and mix well with a whisk. Put the bowl over the pot and stir continuously, using the whisk. When it starts to thicken and look more like thin pudding, remove from the heat. Place the bowl in the refrigerator and let it cool off for about an hour. Pour into your ice cream machine, add the CBD drops, if using, and chocolate chips, then follow manufactures instructions for churning. I use the Cuisinart model (order here) and I let it churn about 15-20 minutes until very thick, serve immediately and enjoy right away or transfer the ice cream to a glass container and freeze until serving.

Mix the coconut milk, water and gelatin in a sauce pan until smooth.
Place the saucepan over medium heat and stir until warm about 5 minutes and slowly stir in cocoa and sweetener.
Pour into a shallow glass container.
Move it to the refrigerator and chill for one hour.
Slice into 1 inch squares and remove with a spatula into a serving dish.
Serve and enjoy.
For Paleo version: Use 1/4 cup honey in place of stevia

I love matcha green tea and cheesecake so I thought I would put them together to make one amazing keto dessert. This one is green so you can take it to your St. Patricks day celebrations. Matcha has amazing antioxidant value but it is important to get it from a clean source because of pollution. I love the one from Perfect Keto because it is presweetened with stevia and has the creaminess of coconut oil added to it that make is smooth and very drinkable. I am sensitive to the caffeine in coffee and have not had it in many years since I had my health breakdown in 2010 and was diagnosed with Hashimoto’s thyroid disease. I decided not to have caffeine then and it helped a lot with recovering my mood and energy. Anytime I have coffee again I am addicted in one day. Like I will get a headache and even feel nauseous if I dont get the kit of caffeine again the next day. It is crazy!

Keto Matcha Cheesecake Recipe

Serves: 12 mini cheesecakes
For the matcha cheesecake:
2 eggs
2 8 oz packages cream cheese, room temperature
1/2 cup Swerve confectioners blend
3 scoops Perfect Keto Matcha (or 3 heaping tablespoons) (order my fav matcha here)
2 oz cocoa butter, chopped
for the crust:
1 cup blanched almond flour
1/4 cup ground golden flax
1/4 cup butter, melted
1/4 teaspoon sea salt
1/2 teaspoon stevia gylcerite
Instructions:
Put the cheesecake ingredients in one bowl and mix with a hand mixer until well blended and set aside. Preheat the oven to 350 degrees. Mix the crust ingredients in another bowl. Line a muffin tin with paper liners. Press the crust mixture evenly into the bottom of the muffin cups until it is about 1/4 inch thick. Pour the cheesecake mixture into the muffin cups until they are about 3/4 inch full. Place the muffin tin in the oven for 20 minutes or until a knife inserted in the center comes out clean. Remove them from the oven and let them cool off, then transfer to the refrigerator for an hour or until chilled. Top with the cocoa butter. Serve and enjoy.
Note: this will work as whole cheesecake in a glass pie pan but the cooking time may take 5-10 minutes longer.
